Seitan Stir Fry with Vegetables
A quick seitan and vegetable stir-fry coated in a savory soy, ginger, garlic, and sesame sauce.
Instructions

Step 1
Whisk the soy sauce, rice vinegar, maple syrup, sesame oil, cornstarch, and water until smooth. Set the sauce aside.

Prepare the seitan and vegetables as noted in the ingredient list, keeping the garlic, ginger, and scallions separate.

Heat 1 tbsp (15 ml) vegetable oil in the wok over medium-high heat. Add the seitan and stir-fry until browned around the edges.

Transfer the browned seitan to a plate.

Add the remaining 1 tbsp (15 ml) vegetable oil to the wok over medium-high heat. Add the onion and carrot, then stir-fry until they begin to soften.

Add the broccoli, bell peppers, and snap peas. Stir-fry until brightly colored and crisp-tender.

Add the garlic and ginger and stir-fry just until fragrant.

Return the seitan to the wok. Whisk the prepared sauce again, pour it in, and toss until the sauce bubbles, thickens, and evenly coats the stir-fry.

Remove the wok from the heat and finish with the scallions and sesame seeds. Serve immediately.
