Seafood Linguine with White Wine Sauce
Linguine tossed with shrimp, mussels, and squid in a light garlic, butter, seafood stock, and dry white wine sauce.

Step 1
Inspect the mussels. Scrub the shells, remove any beards, and discard cracked mussels or open mussels that do not close when tapped.

Bring the water to a boil in a large pot and dissolve the salt in it.

Add the linguine and cook for about 2 minutes less than the package's al dente time. Reserve about 120 ml of the cooking water, then drain the pasta.

Heat the olive oil in a large deep skillet over medium heat. Add the shallot and cook until softened without browning.

Stir in the garlic and red pepper flakes until fragrant.

Pour in the white wine and simmer over medium heat until reduced by about half.

Add the seafood stock and bring the sauce to a gentle simmer over medium heat.

Add the mussels, cover the skillet, and cook until most shells have opened.

Add the shrimp and squid, cover again, and cook until the shrimp are opaque, the squid is just tender, and the seafood reaches 63°C.

Add the drained linguine, butter, lemon juice, parsley, and black pepper. Toss over low heat until the butter melts and the pasta is coated, adding reserved pasta water only as needed to loosen the sauce.
