Savory Quinoa Breakfast Bowl
Warm quinoa topped with sautéed spinach and tomatoes, fried eggs, avocado, feta, and lemon.
Instructions

Step 1
Rinse the quinoa thoroughly under cool running water and drain well.

Transfer the rinsed quinoa to the saucepan. Add the water and ⅜ tsp (2 gr) salt, then bring to a boil over high heat.

Cover the saucepan, reduce to low heat, and simmer until the water is absorbed.

Remove the saucepan from the heat, leave it covered for 5 minutes, then fluff the quinoa.

Halve the tomatoes and slice the avocado, keeping them separate.

Heat 2 tsp (10 ml) olive oil in the skillet over medium heat. Add the prepared tomatoes and the spinach, season with ¼ tsp (1 gr) salt and ¼ tsp (0.5 gr) black pepper, and cook until the spinach wilts and the tomatoes soften slightly.

Transfer the vegetables to a plate. Return the skillet to medium heat, add the remaining 1 tsp (5 ml) olive oil, and crack in the eggs. Season with the remaining ¼ tsp (1 gr) salt and ¼ tsp (0.5 gr) black pepper, then cook until the whites are fully set and the yolks reach the desired doneness.

Divide the quinoa between serving bowls. Top with the sautéed vegetables, eggs, avocado, feta, and lemon juice, then serve warm.
