Creamy rolled oats folded with garlicky spinach and Parmesan, then topped with fried eggs.

Instructions

  1. Step 1

    Bring the water to a boil in a saucepan over high heat.

    Stir in the rolled oats and salt. Reduce to low heat and cook, stirring occasionally, until creamy and tender.

  3. Step 3

    Meanwhile, heat 2 tsp (10 ml) of the olive oil in a skillet over medium heat. Add the garlic and cook until fragrant.

  4. Step 4

    Add the spinach to the skillet and cook, turning frequently, until wilted.

  5. Step 5

    Fold the cooked spinach mixture, Parmesan cheese, and black pepper into the oats. Keep warm over low heat.
