Oven-baked egg muffins filled with spinach, bell pepper, onion, and cheddar, suitable for breakfast or a portable savory snack.

Instructions

  1. Step 1

    Preheat the oven to 190°C. Coat all 12 cups of the muffin tin with the olive oil.

    Ingredients used: 15.0 ml Olive Oil

  2. Step 2

    Prepare the spinach, bell pepper, and onion as noted, then combine them in a mixing bowl to make the vegetable mixture.

    Ingredients used: 50.0 gr Onion, 75.0 gr Red Bell Pepper, 60.0 gr Spinach

    Cookware: Chef Knife, cutting board, mixing bowl

  3. Step 3

    In a separate mixing bowl, whisk the eggs, milk, salt, and black pepper until evenly blended.

    Ingredients used: 10.0 piece Egg, 3.0 gr Fine Salt, 1.0 gr Ground Black Pepper, 120.0 ml Milk

  4. Step 4

    Fold the vegetable mixture and cheddar into the egg mixture until evenly distributed.

    Ingredients used: 100.0 gr Cheddar Cheese

    Cookware: mixing bowl, rubber spatula

  5. Step 5

    Divide the batter evenly among the 12 prepared muffin cups. Bake at 190°C for 18–22 minutes, until the centers are set and reach 71°C.

    Timer: 20 min (fixed)

  6. Step 6

    Cool the muffins in the tin for 5 minutes, then loosen the edges and transfer them to a cooling rack.
