Individual baked egg cups with cheddar, spinach, bell pepper, and scallions, suitable for breakfast or a savory snack.

Instructions

  1. Step 1

    Preheat the oven to 190°C.

  2. Step 2

    Coat all 12 wells of the muffin pan with the olive oil.

    Ingredients used: 10.0 ml Olive Oil

  3. Step 3

    Crack the eggs into the mixing bowl. Add the milk, salt, and black pepper, then whisk until evenly blended.

    Ingredients used: 1.0 gr Black Pepper, 8.0 piece Egg, 3.0 gr Salt, 120.0 ml Whole Milk

  4. Step 4

    Fold the cheddar cheese, bell pepper, spinach, and scallions into the egg mixture.

    Ingredients used: 100.0 gr Bell Pepper, 100.0 gr Cheddar Cheese, 2.0 piece Scallion, 60.0 gr Spinach

    Cookware: mixing bowl, Silicone spatula

  5. Step 5

    Divide the mixture evenly among the 12 prepared muffin wells, filling each about three-quarters full.

  6. Step 6

    Bake at 190°C for 18–22 minutes, until the centers are set and reach 71°C.

  7. Step 7

    Let the muffins cool in the pan for 5 minutes, then loosen the edges and remove them.
