Preheat the oven to 220°C.

Toss the potatoes with 1 ¼ tbsp (20 ml) olive oil, ½ tsp (3 gr) salt, ½ tsp (1 gr) black pepper, and the smoked paprika. Spread them on the baking sheet in a single layer.

Roast the potatoes until browned and tender, turning them once halfway through.

Meanwhile, cook the breakfast sausage in the skillet over medium heat, breaking it into small pieces, until browned and its center reaches 71°C. Transfer it to a plate.

Add 2 tsp (10 ml) olive oil to the skillet over medium heat. Add the bell pepper, onion, ⅜ tsp (2 gr) salt, and ¼ tsp (0.5 gr) black pepper; cook until softened, then transfer to the plate with the sausage.

In a clean mixing bowl, whisk the eggs with the milk, ⅛ tsp (1 gr) salt, and ¼ tsp (0.5 gr) black pepper until evenly combined.

Melt the butter in the skillet over low heat. Add the egg mixture and fold gently with the spatula until softly set and the eggs reach 71°C.

Divide the roasted potatoes among serving bowls. Top with the sausage, vegetables, scrambled eggs, cheddar, avocado, green onion, and hot sauce.
