Sardines with Tomato Sauce

Fresh sardines gently cooked in a savory Mediterranean tomato sauce with garlic, oregano, and a touch of chili.

Instructions

  1. Step 1

    Prepare the onion, garlic, and parsley as indicated. Check the cleaned sardines for any remaining scales and pat them dry.

  2. Step 2

    Heat the olive oil in the skillet over medium heat. Add the onion and cook until soft and lightly golden.

    Timer: 7 min (fixed)

    Ingredients used: 45.0 ml Olive Oil, 150.0 gr Onion

  3. Step 3

    Add the garlic, tomato paste, oregano, paprika, and chili pepper. Stir until fragrant and the tomato paste darkens slightly.

    Timer: 1 min (fixed)

    Ingredients used: 0.5 gr Chili Pepper, 1.0 gr Dried Oregano, 12.0 gr Garlic, 2.0 gr Paprika, 30.0 gr Tomato Paste

  4. Step 4

    Stir in the tomatoes, water, ⅝ tsp (3 gr) salt, and 1 gr black pepper. Bring to a gentle simmer, then cook uncovered over low heat until slightly thickened.

    Timer: 12 min (fixed)

    Ingredients used: 1.0 gr Black Pepper, 480.0 gr Canned Crushed Tomato, 3.0 gr Salt, 120.0 ml Water

  5. Step 5

    Season the sardines with the remaining salt and black pepper. Arrange them in one layer in the sauce, cover, and cook over low heat until the flesh is opaque, flakes easily, and reaches 63°C internally.

  6. Step 6

    Remove the skillet from the heat, scatter the parsley over the sardines, and serve with the tomato sauce.
