Roasted Turkey Legs with Herbs
Turkey legs coated with a garlic, lemon, rosemary, and thyme paste, then roasted over onions until browned and tender.

Step 1
Preheat the oven to 190°C.

Mince the garlic, chop the rosemary and thyme, and zest and juice the lemon. Mix them with the olive oil, salt, and black pepper to form an herb paste.

Spread the onion wedges in the roasting pan and pour in the chicken stock.

Rub the turkey legs evenly with the herb paste, including beneath any loose skin. Arrange them over the onions with the skin facing up.

Roast uncovered at 190°C for 60 minutes.

Turn the pan and spoon the pan juices over the turkey. Continue roasting at 190°C until the thickest part of each leg reaches at least 74°C, without touching the bone.

Transfer the turkey legs to a clean surface and rest them for 15 minutes before serving with the roasted onions and pan juices.
