Roasted Turkey Breast with Sage and Garlic
Bone-in turkey breast coated with a savory garlic and fresh sage paste, then oven-roasted until juicy and golden.

Step 1
Heat the oven to 190°C. Set the roasting rack inside the roasting pan.

Pat the turkey breast dry and place it skin-side up on the rack. Carefully loosen the skin from the meat without tearing it.

Mix the olive oil, garlic, sage, salt, and black pepper. Spread some paste beneath the loosened skin and coat the outside with the remainder.

Roast until the thickest part of the breast reaches 74°C without the thermometer touching bone, beginning to check after 75 minutes.

Transfer the turkey breast to the carving board and rest it for 15 minutes.

Carve the breast meat across the grain and serve.
