Roasted Red Pepper and Tomato Soup
A smooth, savory soup made with oven-roasted red peppers, ripe tomatoes, garlic, basil, and vegetable stock.

Step 1
Preheat the oven to 220°C and set out a rimmed baking sheet.

Prepare the peppers, tomatoes, onion, and garlic. Arrange them on the baking sheet, coat with 1 ¼ tbsp (20 ml) olive oil, and season with ⅝ tsp (4 gr) salt and ¼ tsp (0.5 gr) black pepper.

Roast until the vegetables are tender and the pepper skins are blistered and darkened in spots.

Transfer the peppers to a heatproof bowl, cover, and let them steam.

Peel away the loosened pepper skins. Squeeze the softened garlic from its skins and discard the skins.

Heat the remaining 2 tsp (10 ml) olive oil in a large saucepan over medium heat. Add the tomato paste and cook, stirring, until it darkens slightly.

Add all the roasted vegetables and the vegetable stock. Bring to a simmer over medium heat, then reduce to low heat and simmer uncovered.

Add the basil and blend the soup until smooth.

Stir in the remaining ⅜ tsp (2 gr) salt and ¼ tsp (0.5 gr) black pepper. Warm over low heat, then serve.
