Roasted Beef Tenderloin with Garlic
A center-cut beef tenderloin, seared for a browned crust, coated with garlic-rosemary butter, and oven-roasted until tender.

Step 1
Preheat the oven to 220°C.

Pat the beef dry and tie it at 4 cm intervals for an even shape. Season all over with the salt and black pepper.

Heat the ovenproof skillet over high heat. Add the olive oil, then sear the beef on all sides until well browned.

Mix the softened butter, garlic, and rosemary in the small bowl.

Remove the skillet from the heat and spread the garlic butter over the beef.

Transfer the skillet to the oven and roast until the thickest part of the beef reaches 63°C.

Transfer the beef to a cutting board and rest it for at least 10 minutes.

Remove the twine, slice the tenderloin across the grain, and serve.
