Riced Cauliflower Stir-Fry
Cauliflower rice stir-fried with eggs, colorful vegetables, ginger, garlic, soy sauce, and sesame oil.
Instructions

Step 1
Prepare the carrot, green onions, garlic, and ginger on a cutting board with a chef's knife.

Place the cauliflower florets in a food processor and pulse in batches until they resemble grains of rice.

Crack the eggs into a mixing bowl and whisk until evenly blended.

Heat 2 tsp (10 ml) cooking oil in the wok over medium heat. Add the beaten eggs and scramble, then transfer them to a clean plate.

Add the remaining 1 ¼ tbsp (20 ml) cooking oil to the wok over medium heat. Add the carrot and stir-fry until it begins to soften.

Add the peas, garlic, ginger, and 1 ½ piece (25 gr) of the pale green onion parts. Stir-fry until fragrant and the peas are hot.

Increase to high heat and add the prepared cauliflower rice. Stir-fry until tender but not mushy and excess moisture has evaporated.

Add the soy sauce, sesame oil, and black pepper. Toss until evenly seasoned and hot.

Fold in the scrambled eggs and the remaining 1 piece (15 gr) green onion tops. Cook just until everything is steaming hot, then serve.
