Pork Tenderloin with Green Beans
Herb-seasoned pork tenderloin, pan-seared and oven-roasted, served with tender-crisp green beans tossed with garlic, butter, and lemon.

Step 1
Heat the oven to 220°C. Trim any remaining silver skin from the pork and pat the surface dry.

Season the pork evenly with the thyme and its allocated salt and black pepper.

Heat half the olive oil in the oven-safe skillet over medium heat. Sear the pork, turning with tongs, until browned on all sides.

Transfer the skillet to the oven and roast until the thickest part of the pork reaches 63°C.

While the pork roasts, bring a large saucepan of water to a boil over high heat. Add the green beans, cook until bright green and tender-crisp, then drain thoroughly.

Transfer the roasted pork to a clean cutting board and let it rest before slicing.

Return the emptied saucepan to medium heat. Add the remaining olive oil and garlic, and cook briefly until fragrant without browning.

Return the drained beans to the saucepan. Add the butter and the allocated salt and black pepper, then toss until hot and glossy. Remove from the heat and toss with the lemon juice.

Slice the rested pork across the grain and serve it with the garlic-lemon green beans.
