Pork Tenderloin with Apple Chutney
Oven-roasted pork tenderloin served with a sweet, tangy apple chutney flavored with ginger, mustard seed, and cinnamon.

Step 1
Heat the oven to 220°C.

Peel, core, and dice the apples. Finely chop the red onion and grate the ginger.

Heat 2 tsp (10 ml) olive oil in a saucepan over medium heat. Add the red onion and cook until softened.

Add the ginger, mustard seed, and ground cinnamon. Stir until fragrant.

Stir in the apples, apple cider vinegar, water, brown sugar, raisins, and ¼ tsp (2 gr) salt. Bring to a simmer, then cook uncovered over low heat until thickened; remove from the heat.

While the chutney simmers, pat the pork dry and season it with 1 tsp (6 gr) salt and the ground black pepper.

Heat 1 ¼ tbsp (20 ml) olive oil in an oven-safe skillet over high heat. Add the pork and sear, turning with tongs, until browned on all sides.

Transfer the skillet to the oven and roast until the center of the pork reaches at least 63°C.

Move the pork to a clean cutting board and let it rest before slicing across the grain.

Divide the sliced pork among plates and spoon the warm apple chutney alongside or over it.
