Pork Stir-Fry with Vegetables
Tender strips of pork and crisp vegetables in a savory soy, ginger, garlic, and oyster sauce.

Step 1
Prepare the vegetables first. On a separate clean cutting surface, slice the pork and keep it apart from the vegetables.

Whisk the soy sauce, oyster sauce, water, cornstarch, sugar, and sesame oil until smooth. Set the sauce aside.

Place the wok over high heat and let it heat for 2 minutes.

Add 1 ¼ tbsp (20 ml) neutral oil, followed by the pork and black pepper. Stir-fry until browned and the thickest pieces reach at least 63°C, then transfer the pork to a clean plate.

Reduce to medium heat and add the remaining 2 tsp (10 ml) neutral oil. Add the garlic and ginger and stir until fragrant, about 30 seconds.

Add the broccoli, carrots, and remaining 2 tbsp (30 ml) water. Cover and cook over medium heat until the vegetables begin to soften.

Remove the lid, raise the heat to high, and add the bell peppers and onion. Stir-fry until brightly colored and crisp-tender.

Return the pork and any collected juices to the wok. Whisk in the prepared sauce and stir over high heat until it bubbles, thickens, and coats everything evenly.
