    Whisk the soy sauce, water, rice vinegar, sesame oil, cornstarch, brown sugar, and black pepper until smooth.

    Ingredients used: 12.0 gr Brown Sugar, 12.0 gr Cornstarch, 1.0 gr Ground Black Pepper, 15.0 ml Rice Vinegar, 10.0 ml Sesame Oil, 45.0 ml Soy Sauce, 60.0 ml Water

    Cookware: mixing bowl, whisk

  2. Step 2

    Heat 1 tbsp (15 ml) vegetable oil in the wok over high heat. Add the pork in a single layer and stir-fry until browned but not fully cooked, then transfer it to a clean plate.

  3. Step 3

    Add the remaining 1 tbsp (15 ml) vegetable oil to the wok over high heat. Add the garlic and ginger and stir-fry until fragrant, about 30 seconds.

  4. Step 4

    Add the snow peas and stir-fry until bright green and crisp-tender.

    Return the pork to the wok and pour in the prepared sauce. Reduce to medium heat and stir until the sauce thickens and the pork reaches 63°C.

    Remove the wok from the heat, stir in the scallions, and let the pork stand for 3 minutes before serving.
