Beef and Broccoli Stir-Fry
Tender slices of beef and crisp-tender broccoli coated in a savory soy and oyster sauce.
Instructions

Step 1
Whisk 3 tbsp soy sauce, the oyster sauce, 4 tbsp (60 ml) water, 1 ½ tbsp cornstarch, and the brown sugar until smooth. Set the stir-fry sauce aside.

Combine the beef with 1 tbsp (15 ml) soy sauce, 1 ½ tbsp (12 gr) cornstarch, the sesame oil, and black pepper. Leave it to marinate for 15 minutes.

Heat the wok over high heat. Add 1 tbsp (15 ml) vegetable oil, spread the marinated beef in a single layer, and stir-fry for 3 to 4 minutes; transfer it back to its bowl.

Add the remaining 1 tbsp (15 ml) vegetable oil to the wok, followed by the broccoli. Stir-fry over high heat for 2 minutes.

Add the remaining 4 tbsp (60 ml) water, cover, and cook over medium heat until the broccoli is bright green and crisp-tender.

Uncover the wok and return it to high heat. Add the garlic and ginger, then stir-fry until fragrant.

Return the cooked beef and its juices to the wok. Stir the prepared sauce, pour it in, and cook over high heat until glossy and thickened and the beef reaches at least 63°C.

Remove the wok from the heat and let the beef rest in the sauce before serving.
