Pork Souvlaki With Herbs

Greek-style pork skewers marinated with lemon, garlic, oregano, and rosemary, grilled until browned, and finished with fresh parsley.

Instructions

  1. Step 1

    Cut the trimmed pork into evenly sized 3 cm cubes.

    Ingredients used: 700.0 gr Pork Tenderloin

  2. Step 2

    Combine the olive oil, lemon juice, garlic, oregano, rosemary, salt, and black pepper in a mixing bowl. Add the prepared pork and toss until evenly coated.

    Ingredients used: 2.0 gr Black Pepper, 3.0 gr Dried Oregano, 7.0 gr Fine Salt, 12.0 gr Garlic, 45.0 ml Lemon Juice, 45.0 ml Olive Oil, 4.0 gr Rosemary

  3. Step 3

    Cover and refrigerate the marinated pork.

    Timer: 30 min (fixed)

  4. Step 4

    Preheat the grill to high heat and clean the cooking grate.

    Timer: 5 min (fixed)

    Thread the marinated pork onto the skewers, leaving a small gap between the pieces. Discard any marinade remaining in the bowl.

    Grill the skewers over high heat, turning every few minutes, until browned and the thickest pork pieces reach 63°C.

  7. Step 7

    Transfer the skewers to a clean serving plate and let the pork rest.
