Pork Chops with Apple and Onion
Pan-seared pork chops finished in a savory cider sauce with tender apples, caramelized onion, Dijon mustard, and thyme.
Instructions
-
Step 1
Core the apples and cut them into wedges. Peel the onion and slice it thinly.
-
Step 2
Pat the pork chops dry. Season both sides with the salt and pepper, then press the flour evenly onto the chops.
-
Step 3
Heat the olive oil in a large skillet over medium heat. Sear the prepared chops until browned on both sides, then transfer them to a clean plate.
-
Step 4
Reduce the skillet to low heat. Add the butter and prepared onion, then cook until the onion is soft and lightly golden.
-
Step 5
Add the prepared apple wedges and thyme. Cook over medium heat until the apples begin to soften at the edges.
-
Step 6
Pour in the apple cider and scrape up the browned residue from the skillet. Simmer over medium heat until reduced by about half.
-
Step 7
Whisk in the chicken stock and Dijon mustard. Bring the sauce to a gentle simmer over medium heat.
-
Step 8
Return the chops and their collected juices to the skillet. Simmer over low heat until the centers reach at least 63°C.
-
Step 9
Transfer the chops to a clean plate and rest them for 3 minutes. Spoon the apples, onion, and sauce over the chops to serve.
