Pogaca With Sesame
Soft, lightly savory Turkish yeast rolls brushed with egg yolk, generously topped with sesame seeds, and baked until golden.
Instructions

Step 1
Warm the milk and water together in a small saucepan over low heat until the mixture reaches 35–38°C, then pour it into the mixing bowl.

Whisk the yeast and sugar into the warm liquid. Let the mixture stand until lightly foamy.

Whisk in the egg and sunflower oil. Add the flour and salt, then stir until a rough, soft dough forms.

Knead the dough in the bowl or on a clean work surface until smooth and elastic.

Return the dough to the bowl, cover it with a kitchen towel, and leave it in a warm place until doubled in volume.

Line a baking sheet with parchment paper. Divide the dough into 8 equal portions, shape each into a smooth round, and arrange them with space between.

Cover the shaped rolls loosely with the kitchen towel and let them rise until visibly puffy. Meanwhile, preheat the oven to 190°C.

Brush the tops gently with the egg yolk and scatter the sesame seeds evenly over them.

Bake at 190°C until deeply golden and cooked through, then transfer the rolls to a wire rack and cool for at least 10 minutes.
