Oat Poğaça with Cheese, Pepper, and Olives

Tender Turkish-style savory oat pastries filled with white cheese, kasar cheese, red pepper, black olives, and fresh herbs, then topped with nigella seeds and rolled oats.

Instructions

  1. Step 1

    Heat the oven to 180°C using conventional top-and-bottom heat. Line a baking sheet with parchment paper.

    Whisk the oat flour, baking powder, and salt together in a large mixing bowl.

  3. Step 3

    Whisk the whole egg, egg white, yogurt, and olive oil in a medium mixing bowl until smooth.

    Ingredients used: 1.0 piece Egg, 1.0 piece Egg White, 30.0 ml Olive Oil, 30.0 gr Plain Yogurt

  4. Step 4

    Pour the wet mixture into the dry mixture and stir until no dry pockets of flour remain.

  5. Step 5

    Fold in the white cheese, red pepper, black olives, kasar cheese, dill, parsley, and nigella seeds until evenly distributed.

    Ingredients used: 30.0 gr Black Olive, 4.0 gr Dill, 50.0 gr Kaşar Cheese, 5.0 gr Nigella Seeds, 4.0 gr Parsley, 60.0 gr Red Capia Pepper, 150.0 gr Turkish White Cheese

  6. Step 6

    Divide the dough into 10 equal portions. Shape each portion into a ball, flatten it slightly, and arrange the rounds on the prepared baking sheet.

    Brush the tops with the egg yolk and sprinkle them evenly with the rolled oats.

  8. Step 8

    Bake until the pastries are risen, golden brown, and at least 74°C at the center, about 20–25 minutes.

  9. Step 9

    Cool the pastries on the baking sheet for 5 minutes, then transfer them to a wire rack and cool for another 5 minutes before serving.
