Poached Eggs in Tomato Sauce

Eggs gently cooked in a warmly spiced tomato, sweet pepper, and onion sauce, then finished with fresh parsley.

Instructions

  1. Step 1

    Heat the olive oil in a large skillet over medium heat. Add the onion and red bell pepper and cook, stirring occasionally, until softened.

    Add the garlic, cumin, paprika, and red pepper flakes. Stir until fragrant.

  3. Step 3

    Stir in the tomatoes, salt, and black pepper. Bring the sauce to a gentle simmer over medium heat.

    Make eight wells in the sauce. Crack each egg into a small bowl, then slide it into a well without breaking the yolk.
