Pissaladière Onion Tart
A French onion tart on a crisp yeast dough, topped with anchovy fillets and black olives.
Instructions

Step 1
Combine the lukewarm water and active dry yeast in a mixing bowl. Leave until lightly foamy.

Add the flour, 1 tsp (6 gr) salt, and 1 tbsp (15 ml) olive oil. Stir until a rough dough forms, then knead until smooth and elastic.

Cover the bowl and let the dough rise in a warm place until approximately doubled in volume.

Thinly slice the onions and mince the garlic while the dough rises.

Heat 2 tbsp (30 ml) olive oil in a large skillet over medium heat. Add the sliced onions and the remaining ¼ tsp (2 gr) salt, then cook until very soft and golden, stirring regularly.

Stir the garlic, thyme, and black pepper into the onions. Cook briefly, then remove the skillet from the heat and let the topping cool slightly.

Heat the oven to 220°C. Line a rimmed baking sheet with parchment paper.

Roll the risen dough into a thin rectangle that fits the prepared baking sheet, then transfer it to the sheet.

Spread the onion mixture evenly over the dough, leaving a narrow border. Arrange the anchovy fillets in a lattice and distribute the olives between them.

Bake at 220°C until the crust is crisp and golden at the edges. Rest briefly before slicing and serving warm or at room temperature.
