Pasta with Spinach and Feta

Short pasta tossed with garlicky wilted spinach, lemon, and crumbled feta in a light sauce made with reserved pasta water.

Instructions

  1. Step 1

    Bring a large pot of water to a boil and add the salt. Add the pasta and cook until al dente according to its package directions, stirring occasionally.

    Timer: 10 min (fixed)

  2. Step 2

    Reserve about 240 ml of the pasta cooking water, then drain the pasta.

  3. Step 3

    Heat the olive oil in a large skillet over medium heat. Add the garlic and chili pepper and cook until fragrant without browning.

    Timer: 1 min (fixed)

  4. Step 4

    Add the spinach in batches and stir until fully wilted.

  5. Step 5

    Reduce to low heat. Add the drained pasta, lemon juice, black pepper, and 100 gr of the feta; toss until creamy, adding reserved pasta water a little at a time as needed.

  6. Step 6

    Remove from the heat, scatter the remaining 50 gr of feta over the pasta, and serve promptly.
