Panna Cotta

A classic Italian dessert of vanilla-infused cream gently set with gelatin until smooth and delicately firm.

Instructions

  1. Step 1

    Place the cold water in a small bowl and sprinkle the gelatin evenly over it. Let it stand until fully hydrated and spongy.

    Timer: 5 min (fixed)

    Ingredients used: 7.0 gr Gelatin Powder, 45.0 ml Water

    Cookware: small bowl

  2. Step 2

    Combine the cream, sugar, vanilla seeds, and vanilla pod in a medium saucepan. Warm over medium heat, whisking occasionally, until the sugar dissolves and the cream is steaming; do not let it boil.

    Timer: 6 min (fixed)

    Ingredients used: 75.0 gr Granulated Sugar, 600.0 ml Heavy Cream, 1.0 piece Vanilla Bean

    Cookware: medium saucepan, whisk

  3. Step 3

    Remove the saucepan from the heat and discard the vanilla pod. Add the bloomed gelatin mixture and whisk until completely dissolved.

    Timer: 2 min (fixed)

  4. Step 4

    Strain the panna cotta mixture into a heatproof measuring jug.

    Timer: 2 min (fixed)

  5. Step 5

    Divide the mixture evenly among six ramekins. Let it cool briefly, then refrigerate until fully set.

    Timer: 240 min (fixed)

  6. Step 6

    Serve the panna cotta chilled in the ramekins, or briefly dip each ramekin in warm water and invert onto a plate.
