Oven-Baked Chicken Fajitas
Sheet-pan chicken fajitas with strips of bell pepper and onion, a smoky chili-cumin seasoning, fresh lime, and warm flour tortillas.
Instructions
-
Step 1
Preheat the oven to 220°C and place a rimmed baking sheet inside while the oven heats.
-
Step 2
Slice the bell peppers and onion as specified, keeping the pieces similar in width. Carefully spread them over the hot baking sheet.
-
Step 3
On a clean cutting board, cut the chicken into thin strips and add it to the baking sheet.
-
Step 4
Combine the chili powder, cumin, paprika, garlic powder, oregano, salt, and black pepper in a small bowl.
-
Step 5
Drizzle the chicken and vegetables with the vegetable oil, add the seasoning mixture, and toss until evenly coated. Spread everything into an even layer.
-
Step 6
Bake for 12 minutes.
-
Step 7
Stir the chicken and vegetables, then bake for 8 to 10 minutes more, until the vegetables are tender and the thickest chicken strips reach 74°C.
-
Step 8
While the fajita filling finishes, warm the tortillas in batches in a dry skillet over medium heat until soft and lightly toasted, about 20 seconds per side.
-
Step 9
Remove the fajita filling from the oven, pour over the lime juice, and scatter with the cilantro. Toss gently to combine.
-
Step 10
Serve the hot chicken and vegetables with the warm tortillas.
