    Crack the eggs into the mixing bowl. Add the salt and black pepper, then whisk until evenly blended.

    Place the nonstick skillet over medium heat and melt half the butter. Add the spinach and cook until wilted and excess moisture has evaporated.

    Transfer the cooked spinach to the mixing bowl's dry side or a clean plate. Return the skillet to medium heat and melt the remaining butter.

    Pour the egg mixture into the skillet. Let it begin to set, then gently draw the cooked edges toward the center while tilting the skillet so uncooked egg flows underneath.

    Spread the cooked spinach and cheddar cheese over one half of the omelette. Fold the uncovered half over the filling and cook until the cheese melts and the egg reaches 71°C.
