No-Bake Chocolate Mosaic Balls
Rich chocolate-date bites with a coarse almond mosaic texture, shredded coconut, and coconut oil. They are shaped individually and firmed in the freezer without baking.
Instructions
-
Step 1
Pulse the almonds in a food processor until coarsely ground, leaving small visible pieces rather than reducing them to flour.
-
Step 2
Warm the coconut oil in a small saucepan over low heat just until liquid, then remove it from the heat.
-
Step 3
Combine the date puree, shredded coconut, and cocoa powder in a mixing bowl. Fold in the ground almonds and melted coconut oil until a cohesive, evenly chocolate-colored mixture forms.
-
Step 4
Divide the mixture into 16 equal portions and roll each portion into a compact ball. Arrange the balls on a freezer-safe tray without touching.
-
Step 5
Freeze the balls until firm, about 75 minutes.

This recipe contains no raw animal products. Use a clean food processor and utensils, avoid overheating the coconut oil, and allow the balls to soften briefly before serving if they are frozen very hard.
Risk factors
- The food processor has a sharp blade.
- The coconut oil is briefly heated.
- Very firm frozen portions may be difficult to bite immediately from the freezer.
