No-Added-Sugar Banana Yogurt Cheesecake

A small, crustless cheesecake-style dessert made with mashed banana, eggs, yogurt, and blueberries. It bakes into a tender, lightly sweet custard without added sugar.

Instructions

  1. Step 1

    Preheat the air fryer to 160°C. Line the base of a 15 cm round cake pan with parchment paper.

  2. Step 2

    Mash the bananas in a mixing bowl until mostly smooth.

  3. Step 3

    Add the eggs and yogurt to the mashed banana, then whisk until evenly combined.

    Ingredients used: 2.0 piece Egg, 30.0 ml Yogurt

  4. Step 4

    Fold 50 gr of the blueberries into the batter. Transfer the batter to the prepared pan and scatter the remaining 25 gr over the top.

  5. Step 5

    Place the pan in the air fryer and bake at 160°C for 18–22 minutes. It is ready when the edges are set, the center has only a slight wobble, and the center reaches at least 71°C.

  6. Step 6

    Set the pan on a cooling rack for 30 minutes, then loosen the edge and remove the cheesecake from the pan before serving.
