Moroccan Lamb Stew
A warmly spiced lamb stew with tomatoes, chickpeas, dried apricots, and a bright lemon-and-cilantro finish.

Step 1
Heat half of the olive oil in the Dutch oven over medium heat. Brown the lamb in batches, transferring each batch to the plate once colored on several sides.

Add the remaining olive oil, onion, and carrot to the Dutch oven. Cook over medium heat until the onion softens.

Add the garlic and ginger and stir over medium heat until fragrant.

Stir in the cumin, coriander, paprika, cinnamon, turmeric, cayenne, black pepper, and tomato paste. Cook over medium heat until the paste darkens slightly.

Return the browned lamb and its juices to the Dutch oven. Add the tomato, lamb stock, and salt, scraping any browned residue from the bottom.

Bring the stew to a boil over high heat.

Reduce to low heat, cover partially, and simmer until the lamb begins to tenderize.

Stir in the chickpeas, dried apricots, and honey. Continue simmering over low heat until the lamb is fork-tender and reaches at least 63°C internally.

Remove the stew from the heat and stir in the lemon juice and cilantro. Rest briefly before serving.
