Beef Tagine with Prunes
A Moroccan-style slow-braised beef dish with warm spices, tender prunes, honey, toasted almonds, and sesame seeds.
Instructions

Step 1
Toast the almonds in a dry skillet over medium heat, stirring frequently, until lightly golden. Transfer them to a plate.

Add the sesame seeds to the same skillet and toast over medium heat until fragrant and pale golden. Transfer them to the plate with the almonds.

Pat the beef dry. Heat the olive oil in a Dutch oven over medium-high heat, then brown the beef in batches and transfer it to a clean plate.

Reduce to medium heat, add the onion, and cook until softened and lightly golden.

Add the garlic, ground ginger, cumin, cinnamon, turmeric, black pepper, salt, and saffron. Stir until fragrant.

Return the browned beef and its juices to the pot, then pour in the beef stock. Bring to a simmer over high heat, cover, and reduce to low heat.

Braise gently, stirring occasionally, until the beef is nearly tender.

Stir in the prunes and honey. Simmer uncovered over low heat until the beef is fork-tender and the sauce is glossy and lightly thickened.

Scatter the toasted almonds and sesame seeds over the tagine and serve hot.
