Migas Manchegas With Chorizo
A traditional Spanish skillet dish of lightly moistened stale bread cooked with garlic, olive oil, and browned chorizo until tender and crisp in spots.

Tear the bread into small, uneven crumbs and place them in the mixing bowl.

Dissolve the salt in the water. Sprinkle it gradually over the crumbs while tossing, then cover the bowl and let the bread rest.

Thinly slice the garlic. Heat the olive oil in the skillet over medium heat, add the garlic, and cook until pale golden.

Dice the chorizo, add it to the skillet, and cook until browned and its fat has rendered. If the chorizo was sold raw, ensure it reaches 71°C.

Add the moistened bread to the skillet and turn it thoroughly through the garlic, chorizo, and oil.

Cook over medium heat, stirring and breaking apart clumps frequently, until the migas are loose, golden, and crisp in spots while remaining tender inside. Serve hot.
