Mediterranean Stuffed Zucchini Boats
Tender zucchini boats filled with chickpeas, tomatoes, olives, herbs, breadcrumbs, and feta, then baked until golden.

Step 1
Heat the oven to 200°C.

Scoop out the centers of the zucchini halves, leaving shells about 1 cm thick. Chop the removed flesh, arrange the shells on the baking sheet, and season them with ⅜ tsp (2 gr) salt.

Brush the zucchini shells with 2 tsp (10 ml) olive oil and bake with the cut sides up for 10 minutes.

Meanwhile, heat 1 ¼ tbsp (20 ml) olive oil in the skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and chopped zucchini flesh. Cook over medium heat until the excess moisture has mostly evaporated, about 4 minutes.

Stir in the chickpeas, tomatoes, olives, oregano, black pepper, and remaining ⅝ tsp (4 gr) salt. Cook over medium heat until the tomatoes soften slightly, about 4 minutes.

Remove the skillet from the heat. Stir in the breadcrumbs, parsley, lemon juice, and 80 gr feta cheese.

Spoon the filling evenly into the partially baked zucchini shells. Scatter the remaining 40 gr feta cheese over the tops.

Bake at 200°C until the zucchini is tender and the filling is lightly browned, 15 to 18 minutes.

Rest the zucchini boats for 5 minutes before serving.
