Mediterranean Veggie Wrap

Soft tortillas filled with hummus, crisp vegetables, Kalamata olives, feta, and a bright lemon-oregano dressing.

Instructions

  1. Step 1

    Rinse and dry the spinach, cucumber, tomato, and bell pepper. Slice the cucumber, dice the tomato and bell pepper, and peel and thinly slice the red onion.

    Ingredients used: 150.0 gr Bell Pepper, 200.0 gr Cucumber, 80.0 gr Red Onion, 80.0 gr Spinach, 240.0 gr Tomato

    Whisk the olive oil, lemon juice, oregano, salt, and black pepper together until combined.

    Timer: 2 min (fixed)

    Ingredients used: 1.0 gr Black Pepper, 1.0 gr Dried Oregano, 15.0 ml Extra Virgin Olive Oil, 30.0 ml Lemon Juice, 1.5 gr Salt

    Cookware: small bowl, whisk

  3. Step 3

    Place the prepared vegetables in the mixing bowl. Add the feta and olives, pour over the dressing, and toss gently.

    Timer: 3 min (fixed)

  4. Step 4

    Warm a dry skillet over medium heat. Heat each tortilla for about 15 seconds per side, just until flexible.

  5. Step 5

    Lay the tortillas flat and spread the hummus evenly over them, leaving a narrow border around each edge.

  6. Step 6

    Divide the dressed vegetable filling among the tortillas. Fold in the sides, roll each tortilla tightly around the filling, and serve.
