Loukoumades with Honey
Greek yeast-raised dough bites, fried until crisp and served warm with honey, cinnamon, and chopped walnuts.

Step 1
Combine the lukewarm water, sugar, and yeast in the mixing bowl. Whisk briefly, then leave until the yeast looks foamy.

Add the flour and salt. Stir vigorously until a smooth, thick, sticky batter forms, then cover with the kitchen towel and leave in a warm place until doubled and bubbly.

Pour the vegetable oil into the deep pot and heat over medium heat to 175°C. Set the wire rack over the baking sheet.

Using two spoons, carefully drop small portions of risen batter into the hot oil without crowding the pot. Fry in batches, turning occasionally, until puffed and evenly deep golden, then transfer to the wire rack.

Arrange the warm loukoumades on a serving plate. Drizzle with the honey and sprinkle with the ground cinnamon and chopped walnuts; serve immediately.
