Custard Phyllo Pastries
Crisp, buttery phyllo parcels filled with a smooth vanilla and semolina custard, then finished with powdered sugar and cinnamon.

Step 1
Preheat the oven to 190°C. Brush the baking sheet with 1 tsp (5 gr) of the melted butter.

Heat the milk in a saucepan over medium heat until steaming but not boiling.

Whisk the eggs, granulated sugar, semolina, and salt in a mixing bowl until smooth.

Gradually whisk some hot milk into the egg mixture, then pour the tempered mixture into the saucepan. Cook over medium heat, whisking continuously, until thick and at least 74°C.

Remove the custard from the heat and stir in the vanilla extract and 2 tbsp (30 gr) of the melted butter. Let it cool until warm and thick enough to hold its shape.

Brush one phyllo sheet with some of the remaining butter, fold it in half lengthwise, and place one-eighth of the custard near one end. Fold it into a sealed triangular parcel, place it seam-side down on the baking sheet, and repeat with the remaining phyllo, custard, and butter.

Bake at 190°C until the pastries are deeply golden and crisp.

Transfer the pastries to a wire rack and cool for 10 minutes. Dust with the powdered sugar and cinnamon before serving.
