Linguine Alle Vongole
Italian linguine tossed with tender clams, garlic, dry white wine, olive oil, parsley, and a touch of chili.

Step 1
Inspect the clams and scrub them under cold running water. Discard any with broken shells or any open clams that do not close when tapped.

Combine the water and salt in a large pot and bring to a rolling boil over high heat.

Add the linguine and cook until about 2 minutes short of al dente. Reserve 120 ml pasta water, then drain the linguine.

Meanwhile, warm the olive oil in a large skillet over medium heat. Add the garlic and crushed chili, and cook until fragrant without browning the garlic.

Pour in the wine, increase to high heat, and simmer until slightly reduced.

Add the clams, cover, and cook over high heat until the shells begin opening and the clam meat is opaque.

Uncover and transfer each opened clam to a bowl with a slotted spoon. Continue cooking for up to 3 minutes, then discard any clams that remain closed.

Add the drained linguine and reserved pasta water to the skillet. Toss over medium heat until the sauce lightly coats the pasta.

Return the opened clams to the skillet, add the parsley and black pepper, and toss just until everything is hot. Serve immediately.
