Lentil and Chickpea Curry

A hearty Indian-style curry with tender red lentils, chickpeas, tomatoes, coconut milk, and aromatic spices.

Instructions

  1. Step 1

    Heat the vegetable oil in a large saucepan over medium heat. Add the onion and cook until soft and lightly golden.

  2. Step 2

    Add the garlic and ginger, then cook over medium heat until fragrant.

    Stir in the cumin, coriander, turmeric, garam masala, and chili powder. Cook briefly over medium heat.

    Add the crushed tomato and cook over medium heat until slightly thickened.

    Stir in the lentils, chickpeas, coconut milk, water, and salt. Bring to a boil over high heat.

  6. Step 6

    Reduce to low heat and simmer uncovered, stirring occasionally, until the lentils are tender and the curry is thick.

    Remove from the heat. Stir in the lemon juice and cilantro, then serve.
