Chickpea and Spinach Curry

A warmly spiced Indian-style curry with tender chickpeas, spinach, tomatoes, and coconut milk.

Instructions

  1. Step 1

    Prepare the onion, garlic, ginger, and spinach as noted. Drain and rinse the chickpeas thoroughly.

    Heat the vegetable oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly golden.

    Add the garlic and ginger. Cook over medium heat until fragrant.

    Stir in the cumin, coriander, turmeric, and ground chili. Cook briefly over low heat.

    Add the tomato, return to medium heat, and cook until it darkens slightly and begins to thicken.

    Stir in the chickpeas, coconut milk, water, salt, and black pepper. Bring to a gentle simmer over medium heat, then cook uncovered on low heat until the sauce lightly thickens.

    Remove the pot from the heat. Stir in the garam masala and lemon juice, then serve.
