Coconut Curry Lentil Stew
A hearty Indian-style red lentil stew simmered with tomatoes, coconut milk, warming spices, and spinach, then brightened with lime and cilantro.
Instructions

Rinse the red lentils in a fine-mesh sieve under cool running water until the water is mostly clear, then drain well.

Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until softened and lightly golden.

Add the garlic and ginger, then cook over medium heat until fragrant.

Stir in the curry powder, cumin, and turmeric. Cook over medium heat until aromatic.
