Lahanorizo Cabbage and Rice
A traditional Greek one-pot dish of tender cabbage and rice simmered with tomato, vegetables, dill, lemon, and olive oil.
Instructions

Step 1
Core and thinly shred the cabbage. Chop the onion, grate the carrots, mince the garlic, and rinse and drain the rice.

Heat 2 tbsp (30 ml) olive oil in the large pot over medium heat. Add the onion and carrot and cook until softened.

Add the garlic and tomato paste. Stir until fragrant and the paste darkens slightly.

Add the cabbage, 1 tsp (6 gr) salt, and black pepper. Cook over medium heat, stirring occasionally, until the cabbage begins to wilt.

Stir in the rice and cook briefly so the grains are evenly coated.

Add the tomato, vegetable stock, and bay leaves. Increase to high heat and bring to a boil.

Reduce to low heat, cover, and simmer until the rice is tender and most of the liquid has been absorbed.

Remove the pot from the heat and let it stand covered.

Discard the bay leaves. Stir in the dill, lemon juice, remaining 1 tbsp (15 ml) olive oil, and remaining ½ tsp (3 gr) salt, then serve warm.
