Kisir

A classic Turkish salad of fine bulgur seasoned with tomato and red pepper pastes, lemon, pomegranate molasses, fresh herbs, and crisp vegetables.

Instructions

  1. Step 1

    Place the fine bulgur in the mixing bowl and pour over the boiling water. Cover and leave until the grains are tender and the water is absorbed.

    Timer: 15 min (fixed)

    Ingredients used: 250.0 gr Fine Bulgur, 300.0 ml Water

    Cookware: Cover, measuring jug, mixing bowl

  2. Step 2

    Uncover and fluff the bulgur with a fork. Mix in the tomato paste, red pepper paste, salt, cumin, red pepper flakes, and black pepper until evenly distributed.

    Timer: 3 min (fixed)

    Ingredients used: 1.0 gr Ground Black Pepper, 2.0 gr Ground Cumin, 30.0 gr Red Pepper Paste, 5.0 gr Salt, 30.0 gr Tomato Paste, 2.0 gr Turkish Red Pepper Flakes (Pul Biber)

    Cookware: fork, mixing bowl, spoon

  3. Step 3

    Whisk the olive oil, lemon juice, and pomegranate molasses together in the small bowl.

    Timer: 2 min (fixed)

    Ingredients used: 60.0 ml Extra Virgin Olive Oil, 45.0 ml Lemon Juice, 30.0 ml Pomegranate Molasses

    Cookware: fork, small bowl

  4. Step 4

    Wash and dry the scallions, parsley, mint, tomatoes, and cucumber, then prepare them as noted. Add them to the seasoned bulgur.

    Timer: 12 min (fixed)

    Ingredients used: 1.0 piece Cucumber, 30.0 gr Flat-Leaf Parsley, 15.0 gr Fresh Mint, 5.0 piece Scallion, 2.0 piece Tomato

    Cookware: Chef Knife, cutting board, mixing bowl

  5. Step 5

    Pour the prepared dressing over the bulgur mixture and fold until evenly combined. Let the kisir rest before serving.
