Key Lime Cupcakes
Tender key lime cupcakes topped with a smooth, tangy cream cheese frosting.

Step 1
Preheat the oven to 175°C. Line all 12 wells of the muffin tin with cupcake liners.

Whisk the flour, baking powder, baking soda, and salt together until evenly blended.

Whisk the granulated sugar and key lime zest in a large bowl until fragrant, then whisk in the vegetable oil.

Whisk in the eggs one at a time, then mix in the vanilla extract until smooth.

Combine the whole milk with 45 ml of the key lime juice in a measuring jug.

Fold the dry mixture into the egg mixture in three additions, alternating with the lime-milk mixture in two additions. Stop as soon as no dry streaks remain.

Divide the batter evenly among the 12 lined wells. Bake at 175°C until the tops spring back lightly and a tester comes out clean.

Cool the cupcakes in the tin for 5 minutes, then transfer them to a cooling rack and let them cool completely.

Beat the softened butter and cream cheese until smooth and uniform.
