Keto-Friendly Bagels

Fathead-style bagels made with almond flour, mozzarella, and cream cheese, with a chewy interior and sesame topping.

Instructions

  1. Step 1

    Heat the oven to 200°C. Line a baking sheet with parchment paper.

  2. Step 2

    Whisk the almond flour, baking powder, and salt together in a mixing bowl.

    Ingredients used: 85.0 gr Almond Flour, 4.0 gr Baking Powder, 1.5 gr Fine Salt

  3. Step 3

    Place the mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until melted and evenly combined.

    Timer: 2 min (fixed)

    Ingredients used: 55.0 gr Cream Cheese, 170.0 gr Mozzarella

  4. Step 4

    Let the melted cheese mixture cool for 2 minutes so it remains warm but is no longer steaming.

  5. Step 5

    Beat the egg in a small bowl. Add it and the warm cheese mixture to the dry mixture, then stir until a rough dough forms.

  6. Step 6

    Knead the dough in the bowl until smooth and evenly blended.

  7. Step 7

    Divide the dough into 4 equal portions. Roll each portion into a short rope, join the ends firmly, and place the bagels on the prepared baking sheet.

  8. Step 8

    Press the sesame seeds evenly onto the tops of the shaped bagels.

  9. Step 9

    Bake at 200°C until puffed, deep golden, and set in the centers, 15–18 minutes. Cool on the baking sheet for 5 minutes before serving.
