Karidopita Walnut Cake
A traditional Greek walnut cake warmly spiced with cinnamon and cloves, then soaked with a light lemon syrup.
Instructions

Step 1
Combine 300 gr of the sugar with the water in the saucepan. Bring to a boil over high heat, reduce to medium heat, and simmer gently.

Remove the syrup from the heat, stir in the lemon juice, and leave it to cool while preparing the cake.

Heat the oven to 175°C. Grease the baking pan with the vegetable oil.

Combine the flour, breadcrumbs, baking powder, cinnamon, cloves, salt, and walnuts in the medium mixing bowl.

Beat the softened butter with 180 gr of the sugar in the large mixing bowl until pale and fluffy.

Beat in the eggs one at a time, mixing well after each addition.

Mix in the milk, brandy, vanilla extract, and finely grated orange zest.

Add the prepared dry mixture to the wet mixture and fold just until no dry patches remain.

Spread the batter evenly in the prepared pan and bake at 175°C until browned and a skewer inserted in the center comes out without wet batter.

Place the cake in its pan on the wire rack and let it settle.

Pierce the warm cake evenly with the skewer, then slowly pour the cooled syrup over the entire surface.

Leave the cake at room temperature until the syrup is absorbed and the cake is cool, then cut it into 12 portions.
