A folded stovetop omelette filled with garlicky sautéed mushrooms and flavored with Parmesan and fresh parsley.

    Whisk the eggs, Parmesan, parsley, salt, and black pepper in the mixing bowl until evenly combined.

    Heat the olive oil in the nonstick skillet over medium heat. Add the mushrooms and cook until browned and their released moisture has evaporated.

    Add the garlic to the mushrooms and cook until fragrant.

    Transfer the mushroom mixture to a plate and wipe any loose browned bits from the skillet.

    Return the skillet to medium heat and melt the butter, swirling it across the base.
