Honey Walnut Baklava Rolls
Crisp rolled phyllo filled with cinnamon-spiced walnuts and soaked with a bright honey syrup.
Instructions

Step 1
Heat the oven to 175°C and set the baking dish near the work surface.

Combine the sugar and water in a saucepan. Bring to a simmer over medium heat, stirring until dissolved, then simmer gently for 5 minutes.

Remove the saucepan from the heat and stir in the honey and lemon juice. Transfer the syrup to a heatproof jug and let it cool while preparing the rolls.

Finely chop the walnuts, then combine them with the cinnamon and salt in a mixing bowl.

Melt the butter in the cleaned saucepan over low heat, then remove it from the heat.

Brush the baking dish lightly with melted butter. Stack two phyllo sheets, brushing each sheet lightly with butter, and spread one-ninth of the walnut mixture in a narrow strip along a short edge. Roll into a snug log and repeat to make 9 logs.

Cut each log crosswise into 2 equal rolls. Arrange the 18 rolls seam-side down in the baking dish and brush their tops with the melted butter left from assembly.

Bake at 175°C until the rolls are deeply golden and crisp, 30–35 minutes.

Set the hot baking dish on a heat-safe surface and slowly pour the cooled honey syrup evenly over the rolls. Leave them uncovered for 2 hours to absorb the syrup and cool before serving.
