Harira with Lamb
A hearty Moroccan tomato-based soup with tender lamb, chickpeas, lentils, vermicelli, warming spices, and fresh herbs.

Step 1
Prepare the lamb, vegetables, garlic, ginger, herbs, and lemon as described.

Heat the olive oil in a large pot over medium heat. Add the lamb and brown it on several sides.

Add the onion and celery. Cook over medium heat until softened.

Stir in the garlic, ginger, turmeric, cinnamon, black pepper, and tomato paste. Cook until fragrant and the paste darkens slightly.

Add the crushed tomato and lamb stock, scraping the bottom of the pot. Bring to a boil over high heat, then cover partially and simmer over low heat.

Add the lentils and chickpeas. Continue simmering over low heat until the lentils are tender and the lamb reaches at least 71°C internally.

Whisk the flour and cool water in a bowl until completely smooth.

Stir the slurry gradually into the simmering soup. Add the vermicelli, cilantro, parsley, and salt, then simmer over low heat until the pasta is tender and the soup has thickened.

Ladle the harira into bowls and serve with the lemon wedges for squeezing over each portion.
