Grilled Swordfish with Tomato Salsa

Tender grilled swordfish steaks topped with a fresh tomato, basil, lemon, and red onion salsa.

Instructions

  1. Step 1

    Preheat the grill to medium heat.

  2. Step 2

    Combine the tomato, red onion, basil, garlic, lemon juice, olive oil, ⅜ tsp (2 gr) salt, and ½ tsp (1 gr) black pepper. Let the salsa stand for 10 minutes.

    Timer: 10 min (fixed)

    Ingredients used: 10.0 gr Basil, 1.0 gr Black Pepper, 2.0 gr Fine Salt, 4.0 gr Garlic, 30.0 ml Lemon Juice, 30.0 ml Olive Oil, 60.0 gr Red Onion, 450.0 gr Tomato

  3. Step 3

    Pat the swordfish steaks dry. Brush them with 1 tbsp (15 ml) olive oil, then season with ⅝ tsp (4 gr) salt and ½ tsp (1 gr) black pepper.

  4. Step 4

    Grill the swordfish for 4–5 minutes per side, turning once, until the center reaches 63°C.

    Timer: 9 min (fixed)

  5. Step 5

    Transfer the swordfish to a serving platter and rest for 3 minutes. Spoon the tomato salsa over the steaks and serve.
